Shopska: The Perfect Summer Salad

Mark Kilham For those of us that consider ourselves novices in the kitchen, the summer provides a great opportunity to practice our skills. During these warmer months, I’m constantly on the search for recipes that take advantage of the multitude of in-season fruits and vegetables,  but don’t take much time to prepare. Lately at my home, we have constantly been preparing the Bulgarian Salad or “shopska” salad. This simple salad is extremely popular throughout the Balkans and the rest of Europe, and it is the perfect dish when looking for a quick and easy recipe that will leave you feeling satiated and refreshed. Shopska is great as a light main course, but also complements most meals quite nicely. The key in preparing this dish is to find the freshest ingredients possible. See below for the recipe:



4 Fresh medium juicy ripe tomatoes

2 Fresh Cucumbers

120 ml feta cheese – make sure you use a high quality cheese

1 Dash salt and pepper

80 ml olive oil

60 ml  vinegar (white wine, balsamic, red wine – your choice)

29.5 ml parsley

Optional Ingredients:

green peppers

red peppers

yellow onion


1 large mixing bowl

1 set of serving utensils

1 covered jar

1 piece of cellophane or other cover for mixing bowl

1 sharp knife (for dicing the vegetables)

1 sturdy cutting board

Preparation Instructions

Rinse and dice the tomatoes and cucumbers into large pieces. Rinse and chop the peppers, onions and parsley into smaller pieces. Dry off ingredients, and place the tomatoes, cucumbers, peppers, parsley and onions into a large mixing bowl. Add the oil, vinegar, salt and pepper mixture into a covered jar and shake well. Add ingredients to taste. Toss the salad with the newly created dressing. Place covered serving bowl in the refrigerate until it’s time to serve. Before serving, top the salad with the feta cheese. Serve and enjoy. Makes about 6 to 8 servings.
